[recipe] recipe review Friday (late) – everyday soup

I actually made this a few weeks ago but was too lazy to post until this week, I haven’t really made anything new the past few weeks because of stress lol. Anyway, a couple of years ago, I subscribed to a monthly “take care of yourself” recipe box from ohmonah back when they were releasing the series during the pandemic. I made a few recipes from their cards but haven’t made this simple soup recipe yet. I had the ingredients already since it’s a base recipe you can alter any way you like, so I went ahead and tried to make something with leftovers for dinner!

Ingredients Summary – easy to find at any grocery store although most of the ingredients are found at Asian groceries

  • soup stock base – dashi and mushroom stock powder plus a little soy sauce
  • protein – firm tofu, stirred egg
  • veggies – scallions, cabbage
  • garnish – chili crisp, scallion
  • noodles – green tea soba noodles

Steps Summary – easy, may require 2 pots of water boiling though

Make soup stock with 1 tablespoon base or 1 to 2 tablespoons liquid seasoning in 2 cups of hot water. Cook your proteins, I used 3 minutes for one stirred egg and five minutes for cubed firm tofu, about one-fourth a block. I also put in a handful of sliced cabbage and scallions at the last 3 minutes. Meanwhile prepare your noodles (2 servings) as directed on package.  Combine into a bowl and garnish with chili crisp.

Taste Summary –  uhhh tastes like what I put into it lol

  • Taste
    • since the green tea noodles has a very delicate flavor, I tried to put in a light soup base with dashi and mushroom and soy sauce, with the lightest of proteins and vegetables. Then I blew that delicate flavor away with chili crisp lol.
  • Texture
    •  textures were fine, but I did feel like the cabbage was still a little crunchy, so I could have cooked it for maybe 2 more minutes or shredded it even finer.

Convenience Summary – Obviously very convenient to make as you can swap out ingredients based on what you already have, nothing too time intensive, perfect if you like being creative.  Ohmonah lists six of their favorite combinations in case you don’t have ideas and they all look super tasty except for the ones with bacon which is my own preference, I eat bacon if it’s in the meal but I don’t buy it. I think maybe the only thing that’s not great is that this recipe makes less than 2 servings but more than 1 serving (for my appetite anyway), so there was a tiny bit leftover, I heated the leftover for lunch the next day. There were plenty of other recipes worth trying but as usual, they were a little time intensive or they looked like all of my previous recipes lol. I’m trying to be more creative but it’s just so hard being so distracted and “busy.”
